Roasted Radishes and Greens

I'm not going to lie to you.  Sometimes it's okay to eat your feelings.  Really, it is. And everybody does it on occasion... (right?!)

Sometimes it's okay to eat your feelings when you're feeling under the weather because it's grey in Seattle. Again.  In June.  And it's pouring buckets of rain everywhere.  And you just wish you lived anywhere else but here.  But that's too bad.  Because you live here. Then it's okay to eat your feelings a little, I promise.  (Especially if you eat your feelings with one of these.)

Then there are those moments when you want to recover from eating your feelings.  Sure, it was a little fun while it lasted, but now it's time to get something healthy and fresh in there pronto.  Sounds like you need some roasted radishes my friend.

Roasting radishes brings out their sweetness, which is a wonderful complement to their natural spicy flavor.  Small, fresh radishes taste best and I would highly recommend getting them locally if possible. The radish greens are also baked, making them light, crispy and crunchy.  It looks like kale chips just met their match.

Roasted Radishes and Greens
Serves 2 - 4

1 bunch radishes
2 teaspoons coconut oil, divided
Coarse sea salt and pepper

Preheat oven to 375 degrees F.

Separate 1 bunch radishes (halved if large) and their greens.  Arrange on two rimmed baking sheets.

Toss radishes with 1 teaspoon coconut oil.  Roast, until radishes are tender and caramelized, about 15 to 20 minutes.  Remove from oven and set aside.  Sprinkle with salt and pepper before serving.

Toss greens with 1 teaspoon coconut oil.  Bake until leaves are crisp, about 7 - 8 minutes.  Serve warm.

  1. This weather just makes me want to stay in bed all day, but this recipe makes me think it would be worth it to drag my behind out to get some radishes. :-) I've never thought to roast radishes. These look amazing!

  2. I started roasting radishes a couple of months ago and couldn't be happier with the discovery. Another good one is steaming them and then adding fresh minced garlic and coconut oil on top. Oh my...
Sorry to hear that the weather hasn't been all that nice to you :(

    1. Any oil that has a medium-high smoke point will work. PCC has a great guide about cooking with different oils that might be helpful: http://www.pccnaturalmarkets.com/guides/tips_cooking_oils.html

    2. Thank so much for your answer! I wasn't aware that the differents types of oils should be cooked differently.

    1. Radish greens can also be sauteed or added to a stir fry. They taste slightly spicy (like radishes), but this taste mellows as they are cooked. This recipe will make them crunchy like chips, which is absolutely delicious. Hope you have fun cooking with the greens!

  7. I've never had cooked radishes. I've always hated the bite of radish. It sounds like cooking them takes it away? If so, I definitely need to try these. Since I'm eating just about only veggies these days, every way I can make 'em is a good way. :)

    1. Roasting definitely diminishes that "bite" that radishes have. They will still taste mildly spicy, but not surprisingly so. Let me know if you try the recipe. :)

  9. This post couldn't have happened at a better time, I've been getting radishes in our weekly organic veg box and since it's winter here, I haven't felt like using them in cold salads so I am definitely going to try roasting them - thanks for the tip ;)
