I drink fresh vegetable juice almost daily, but I tend to filter the juices I show here. See, I have a feeling that if I posted a juice recipe that said "juice 1 giant bunch of kale and a peeled lemon" some of you might actually drink it. And, if you aren't a hard-core juice fanatic, you'd take one sip of that and never come back here.
But this green juice? This one is actually doable. Let's talk about it.

This juice gets some tart-sweetness from green apples, which have less sugar than other apple varieties, but still help to liven up the juice a bit. I also added in some cucumber because it is very hydrating and I love cucumber juice for its mellow taste. Combine these goodies with some celery, ginger, a peeled lemon, and a bit of kale and you have yourself a powerful, nutrient-packed green juice that tastes like a healthy version of lemonade. I've found that the tartness from lemons really help cut the "green" taste from a lot of juices so this is a great juice to try if you are nervous about green vegetables juices. And if you are a true juice beginner, you can sub out the green apples for red to make the juice a bit sweeter.
Green Lemonade
Yield: 1 large juice or 2 medium juices
2 small green apples
1 lemon, peeled
1/2 cucumber
6 stalks celery
6 large pieces of kale
1-inch piece of ginger
Juice ingredients and enjoy immediately.

I drink this juice all the time and love it! Sometimes I throw in spinach or parsley.
ReplyDeleteOhh, parsley is a great idea! I love herbs in juices!
DeletePerfect. I just got a juicer for my birthday and it looks like I need to give this a try. Do you use green kale? I find that if the leaves have even a bit of purple or red in them, it turns a smoothie (and I'm assuming a juice) an unappetizing muddy color. Yours looks so vibrant!
ReplyDeleteI used lacinato (aka dinosaur) kale in this (pictured above). I don't think I have used purple kale in juices before, but I love it in smoothies. Have fun with the new juicer and happy birthday! :)
DeleteI love this and am going to try it in the morning. I love juicing.
ReplyDeleteI've had this with carrot juice in it as well. Love this!
ReplyDeleteThis juice looks fantastic! I have recently started to enjoy green juices/smoothies. The addition of cucumber is a great idea. I'm saving this recipe to try soon!
ReplyDeleteyuumm this looks great . I am gonna try it tomorrow after i get all the ingredients
ReplyDeleteI am so making this right. now.

ReplyDeleteResearch Methodology
So excited to have found this post and your blog! I haven't tried a green juice yet but I think I could do this one. I'll be coming back regularly.
ReplyDeleteThanks Vanessa! Hope you enjoy the green juice! :)
DeleteDoes the kale juice okay in any juicer? Or do I have to use an auger juicer?
ReplyDeleteI have a basic Juicerman juicer that is pretty old at this point. I will "ball up" the kale and follow it through with something juicy, like a lemon, and then it juices just fine.
DeleteI make something similar for breakfast every morning, this sounds so refreshing, I am putting it on my list of things to try this week.
ReplyDeleteI tried to convert this to a smoothie recipe. still working the kinks out, but it tastes pretty good! the texture is still a little weird, I think that's because of the lemon though.
ReplyDeleteInteresting, I've never tried this as a smoothie. I love that idea! I've had a hard time using apples in smoothies as I've found the fiber makes the texture off. Let me know if you are able to make a successful version. :)
